RECIPE – The Cookie

COOKIES WITH TWO CHOCOLATES
For 20 cookies

In the bowl of a mixer,, mix the brown sugar (120g), the caster sugar (120g), the flour (300g) and the yeast (6g). Add the butter cut in pieces (175g), then 1 large egg. Then add the chocolates (190g milk + 190g black) finely chopped and mix gently. On a worktop, arrange your dough to form a roll of 5 cm in diameter. Shoot everything and book cool for 30 min.
Preheat your oven to 170 °C. In the roll of hard dough, cut slices about 2.5 cm thick. Arrange your cookies well spaced on a baking sheet covered with a baking sheet and bake for 10 min. Let cool. Enjoy.

In order to improve its quality and have a better traceability, La Pâtisserie has choosen to turn towards organic agriculture and to create new breads certified AB.

For this new organic range, the chefs have decided to wotk with the Viron flourmill, well knowned for its savoir-faire and rigor when it comes to select the best grains. The butter used is a fresh butter from Charentes-Poitou and the water pure and nitrate-free.
